* 4 boneless, skinless chicken breast halves&lt;br /&gt;
* 2 T butter&lt;br /&gt;
* 8 oz mushrooms, thinly sliced&lt;br /&gt;
* 1 medium onion, finely chopped&lt;br /&gt;
* 1 T green peppercorns in brine, drained&lt;br /&gt;
* 1 1/4 c chicken broth&lt;br /&gt;
* 3/4 c half and half&lt;br /&gt;
* 2 T dry sherry&lt;br /&gt;
* 1 1/2 T Dijon mustard&lt;br /&gt;

=== Preparation ===&lt;br /&gt;
Flatten chicken; season with salt and pepper.  Saute in butter over medium heat until just cooked through.  Transfer to plate.  Add mushrooms, onion and peppercorns to skillet and saute until tender.  Add broth, cream, sherry, and mustard; simmer until reduced to sauce consistency, about 15 minutes.  Return chicken and juices to pan, heat through.&lt;br /&gt;
