* 3 1/3 c all-purpose flour&lt;br /&gt;
* 1 t salt&lt;br /&gt;
* 2 t baking soda&lt;br /&gt;
* 4 1/2 t cream of tartar&lt;br /&gt;
* 1/4 c cold unsalted butter, diced&lt;br /&gt;
* 2 T vegetable shortening, in teaspoon sized lumps&lt;br /&gt;
* 1 1/3 c milk&lt;br /&gt;
* 1 large egg, beaten, for egg-wash&lt;br /&gt;

=== Preparation ===&lt;br /&gt;
Preheat oven to 425°F.&lt;br /&gt;
&lt;br /&gt;
Sift the flour, salt, baking soda, and cream of tartar into a large bowl.  Rub in the fats till the mixture is like damp sand.  Add the milk, mix &amp;#039;&amp;#039;briefly&amp;#039;&amp;#039; and then turn out onto a floured surface and knead lightly to form a dough.&lt;br /&gt;
&lt;br /&gt;
Roll out to about 1 to 1 1/4 inch thickness.  Dip a 2 1/2 inch cutter into some flour, then stamp out at least 10 scones.  Re-roll for the last two.  Place on a lightly greased baking sheet very close together, then brush the tops with the egg wash.  Bake for 10 minutes or until risen and golden.&lt;br /&gt;

Excellent with clotted cream and jam, lemon curd, or molasses.&lt;br /&gt;
