Brush ribs with Rose&amp;#039;s lime juice.  Mix paprika, garlic, cumin, chili powder, brown sugar, black pepper, salt, and cayenne in a large bowl.  Sprinkle rib rub liberally over ribs.  Refrigerate for at least 4 hours, or overnight.  Store leftover rub in an air-tight container.&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 200°&lt;br /&gt;
&lt;br /&gt;
Remove ribs from the refrigerator, and bring to room temperature.  Place ribs on a rimmed baking sheet, put on the middle rack of the oven, and bake 3 hours.  At this point, ribs can be refrigerated for up to 3 days.&lt;br /&gt;
&lt;br /&gt;
Make the BBQ sauce.&lt;br /&gt;
&lt;br /&gt;
Start a charcoal or wood fire in a grill, allowing coals to burn down.  Spread out coals so the heat is even.  Place ribs on the grill and cook, depending on the heat, 11 to 17 minutes per side.  You want the ribs to develop a crust on the outside and be heated through.  Brush both sides of ribs with barbecue sauce, and grill each side again until sauce has caramelized a bit.  Remove ribs from the grill, slice between each bone, and serve.&lt;br /&gt;
