Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan (not springform—trust me!) and line the bottom with parchment if you’re nervous about sticking.&lt;br /&gt;

Make the rhubarb topping:&lt;br /&gt;
&lt;br /&gt;
In a saucepan over medium heat, melt 2 tbsp butter and add the ¾ cup sugar. Stir until it’s syrupy, then add the rhubarb and cook for 2–3 minutes until it starts to soften slightly. Pour the mixture evenly into the prepared pan.&lt;br /&gt;

Mix the cake batter:&lt;br /&gt;

In a bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.&lt;br /&gt;

Flip it!  Let the cake cool in the pan for about 10 minutes. Run a knife around the edges, place a plate over the top, and carefully flip. Give it a little tap and lift the pan off slowly. Voilà!&lt;br /&gt;

&lt;br /&gt;
