* 12 oz provoline, firmish mozzarella, manouri, or other mild and meltable cheese, shredded&lt;br /&gt;
* 2 T extra virgin olive oil&lt;br /&gt;
* 4 cloves garlic, very thinly sliced or minced&lt;br /&gt;
* ~2 T red wine vinegar&lt;br /&gt;
* 1 T capers in brine, drained&lt;br /&gt;
* 1 t crumbled dried oregano&lt;br /&gt;
* black pepper&lt;br /&gt;
* 1-2 t chopped fresh flat-leaf parsley&lt;br /&gt;

=== Preparation ===&lt;br /&gt;
Preheat the broiler.&lt;br /&gt;
&lt;br /&gt;
Arrange the artichokes on the bread and place on a baking sheet, then top with the cheese.&lt;br /&gt;
&lt;br /&gt;
In a heavy nonstick skillet, heat the olive oil over medium-high heat, then add the garlic and lightly brown.  Add the red wine vinegar, capers, oregano, and black pepper, and cook a minute or two, or until the liquid reduces to about 2 teaspoons.  Stir in the parsley.  Spoon over the cheese-topped bread.&lt;br /&gt;
&lt;br /&gt;
Broil until the cheese melts, bubbles, and turns golden in spots.  Eat right away.&lt;br /&gt;
