A simmering pot is simply that:  a pot simmering something that smells wonderful on the stove.  This recipe is simply a guideline.  It is great to experiment with.  Swap out the spices for different ones or different combinations of them.  The oranges and cranberries add citrus notes.  Try adding/using lemons, limes, and/or grapefruit.  The apples add a little sweetness.  The spices/herbs/aromatics carry the load:  cinnamon, cardamom, nutmeg, star anise, rosemary, ginger, etc..  &lt;br /&gt;

When using various spices, whole seeds/pods work best.&lt;br /&gt;
=== Ingredients ===&lt;br /&gt;
* 3-4 c water&lt;br /&gt;
* 1 orange, sliced&lt;br /&gt;
* 1/2 c fresh cranberries&amp;lt;ref&amp;gt;I&amp;#039;ve used craisins when I couldn&amp;#039;t get cranberries.  They worked too, since the get reconstituted, but the aroma from them was a little more muted than fresh cranberries.&amp;lt;/ref&amp;gt;&lt;br /&gt;
* 1 tart apple, sliced&lt;br /&gt;
* 1-2 cinnamon sticks&lt;br /&gt;
* 1-2 t whole cloves&lt;br /&gt;
* 1/2 inch of fresh ginger, thinly sliced&lt;br /&gt;
&lt;br /&gt;
=== Preparation ===&lt;br /&gt;
Put everything into a 1-2 qt pot and bring to a low boil, then reduce the heat to a light simmer.  And let it simmer and simmer and simmer.&lt;br /&gt;
&lt;br /&gt;
Check the water lever periodically and add more as needed.  No need to increase the heat to bring it back to a simmer, it will get there shortly.&lt;br /&gt;
&lt;br /&gt;
The end result after multiple hours of simmering is going to be a gloppy mess, but it cleans up easily.&lt;br /&gt;
