The sweet flavor of orange butter, heightened with vanilla and nutmeg, is great atop hot pancakes and waffles.

Ingredients

12 T unsalted butter, at room temperature
2 T confectioners' sugar
1 T grated orange zest
2 T orange-flavored liquer
2 T fresh orange juice
1/4 t vanilla extract
1/4 t freshly grated nutmeg
pinch of salt

Preparation

Combine the butter, confectioners' sugar, and orange zest in a mixer bowl, and beat until light. Then slowly beat in the liqueur, juice, vanilla, nutmeg, and salt until smooth. Transfer to a crock, and serve immediately.

Note: Orange Butter can be stored, covered, in the refrigerator. Before serving, bring it to room temperature and beat again with an electric mixer to lighten.
