Ingredients

  • 1/2 c + 2 T fine cornmeal or plenta
  • 1/2 c all-purpose flour
  • 4 t baking powder
  • 2 t sugar
  • 1/2 t salt
  • 2 large eggs
  • 1 1/3 c milk
  • 2 T butter, melted

Preparation

Stir together the dry ingredients in one bowl. In a large bowl, whisk the eggs and milk. Then gradually beat in the dry ingredients and when combined stir in the melted butter. Heat an oiled griddle or pan and drop, one by one, tablespoonfuls of the batter on the hot surface to make little pancakes about 2 1/2 inches in diameter.
