Be forewarned that this recipe will severely strain most mixers and I have broken at least one wooden spoon trying to stir it by hand.  We have a 575W KitchenAid stand mixer, and it is barely able to handle the full recipe on low speed by the end.

Ingredients

  • 1 c brown sugar
  • 1 c white sugar
  • 1 c shortening or butter
  • 3 eggs
  • 2 tsp baking soda
  • 1 tsp salt (reduce or eliminate if using salted butter)
  • 2 tsp cream of tartar
  • 1/2 T vanilla
  • ~4 c flour
  • 1 1/2 c chocolate chips

Preparation

Preheat oven to 350°.

Mix all the ingredients except the flour and chocolate chips. Mix in the flour one cup at a time. Finally mix in the chocolate chips. We use a #50 scoop to scoop out dough and place on cookie sheets. If doing the full recipe, it helps to start one cookie sheet on a lower rack, then move it to an upper rack at 1/2 the time while adding a second cookie sheet of dough to the bottom rack. This way there is always two sheets of cookies baking at a time.

Bake for 8-10 minutes at 350°.
