Ingredients
- 4 large sweet potatoes, peeled and cut into 6 spears each
- 1/4 cup olive oil
- 1/4 cup brown sugar
- Kosher salt and freshly ground black pepper
Garlic Aioli
- 3 cloves garlic, grated
- 1/2 lemon, juiced
- 1 cup mayonnaise
- 1 tablespoon smoked paprika
- Salt and freshly ground black pepper
Preparation
Preheat the oven to 425; place a baking sheet in the oven to preheat.
Place the sweet potato wedges in a bowl and toss to coat with the oil, brown sugar, salt and pepper. Place on the preheated sheet tray and bake until slightly crisp and beginning to brown, 25 to 30 minutes.
Meanwhile, mix together the garlic, lemon juice, mayonnaise, paprika and salt and pepper to taste. Serve the fries with the aioli on the side to dip.
