Ingredients
- 10 oz bittersweet chocolate, chopped
- 1/2 c + 2 t flour
- 3 T unsweetened cocoa powder
- 1/4 t baking powder
- 1/4 t chipotle or cayenne powder
- 1/4 t salt
- 5 T unsalted butter, softened
- 1 c + 1 T sugar
- 3 eggs
- 2 t vanilla
- 1 (3.3 oz) Vosges Red Fire chocolate bar, chopped
- 1/2 c cinnamon chips
Dusting
- 4 t sugar
- 4 t cinnamon
- 1/8 t chipotle or cayenne powder
Preparation
Preheat oven to 350°. Line baking sheets with parchment paper.
Melt bittersweet chocolate over double boiler until smooth. Remove from heat; cool 10 minutes.
In medium bowl, whisk flour, cocoa, baking powder, chipotle, and salt. In large bowl, beat butter and sugar until crumbly.
Add eggs one at a time, beating well. Beat until pale, light and creamy; about 5 minutes. Add melted chocolate and vanilla; beat just until combined. Fold in flour mixture, then chopped chocolate chips. In small bowl, whisk together dusting ingredients.
Drop by 1/2 c on baking sheets, 2" apart. Sprinkle with dusting mixture. Bake 16 minutes, until cracked but not firm. Cool completely on sheets.
