Ingredients

  • 2 1/4 lb red-skinned sweet potatoes (yams), peeled and cut into 1 1/2" pieces
  • 6 T butter
  • 3 T honey
  • 1 t lemon juice

Preparation

Preheat oven to 350°. Arrange yams in 9x13" glass baking dish. Stir butter, honey, and lemon juice in small pan over medium heat until melted. Pour over yams; toss to coat. Sprinkle generously with salt and pepper. Bake until tender, stirring and turning occasionally, about 50 minutes.
