Ingredients
- 3/4 lb bulk Italian sausage
- 1/2 c chopped onion
- 1 garlic clove, minced
- 1 can (15 1/2 oz) butter beans, rinsed and drained
- 1 can (15 1/2 oz) black beans, rinsed and drained
- 1 can (14 1/2 oz) diced tomatoes, (not drained)
- 1 can (14 1/2 oz) beef broth
- 1 T minced fresh basil (or 1 t. dried)
- 2 T shredded Parmesan
Preparation
In a large saucepan, cook sausage, onion and garlic until sausage is browned; drain. Add beans, tomatoes, broth and basil. Cover and simmer for 10 minutes. Sprinkle each serving with Parmesan cheese.
