  • 1 oval of Appetizer Flatbread
  • 1/2 c crimini mushrooms, sliced
  • 2 t vegetable oil
  • 1 T balsamic vinegar
  • 2 T crumbled goat cheese
  • 1/2 t fresh thyme
  • 1 t balsamic vinegar

Preparation

In a medium skillet, heat the oil over medium heat. Add the mushrooms and cook until nearly tender. Add 1 tablespoon balsamic vinegar; continue cooking until liquid evaporates and mushrooms are tender. Spread the mushrooms over a dough oval. Sprinkle with the goat cheese and thyme.

Just before serving, drizzle with 1 teaspoon balsamic vinegar.
