Ingredients

  • 1 lb lean ground beef
  • 1 c chopped onions
  • 1 can (14.5 oz) diced tomatoes with their juice
  • 2 t Worcestershire sauce
  • 1/2 t chili powder
  • 2 t salt
  • 3 medium potatoes, peeled and sliced
  • 1 1/2 c fresh or frozen corn kernels
  • 1 1/2 c frozen peas, thawed
  • 1 green bell pepper, seeded and chopped (optional)
  • 1/3 c all-purpose flour
  • 1 1/2 c shredded Cheddar cheese

Preparation

Preheat the oven to 375°. Coat a 9x13 baking dish with cooking spray.

In a large bowl, mix the ground beef, onions, tomatoes with their juice, Worcestershire, chili powder, and salt. Pat the mixture into a smooth layer in the baking dish. Spread the potatoes over the meat layer.

Combine the corn, peas, and green pepper in a medium bowl, add the flour, and toss to coat the vegetables. Spread in an even layer over the potato layer.

Coat a sheet of aluminum foil with cooking spray and cover the casserole tightly. Bake for 45 minutes. Uncover, sprinkle with cheese, and bake for 10 minutes longer, or until the potatoes are tender. Cut into squares and serve.
