The soup makes a light, creamy broth.
Ingredients
- 1 tbsp olive oil
- 1 lb spicy Italian sausage[1]
- 1 red onion (diced)
- 2 large carrots (sliced)
- 2 tbsp minced garlic
- 6 cups chicken broth
- 30 oz canned white beans (drained)
- 2 cups spinach
- 2 bay leaves
- 1 tsp salt
- 1 tsp Italian seasoning
- 1 cup half and half
Preparation
Heat oil in a large pot. Cook sausage.
Add onions, garlic, and carrots. Cook 3-4 minutes.
Add broth, beans, salt, Italian seasoning, and bay leaves. Bring to a boil, reduce heat, simmer for 25 minutes until carrots are tender.
Stir in spinach and cream and serve.
Notes
- ↑ Using a sweet Italian sausage is too mild. Add red pepper flake.
