Ingredients
- 1 rotisserie chicken, skin removed and shredded from the bone
- 1 1/4 c mayonnaise
- 2 tbsp. curry powder
- 1 tsp. harissa paste
- 1/2 tsp. cinnamon
- Juice 1/2 lemon
- 1/3 c mango chutney
- 3/4 c sultanas (aka golden raisins)
- 1 c flaked almonds
Preparation
In a large bowl add your mayonnaise, curry powder, harissa, ground cinnamon, mango chutney and lemon juice, and mix until well combined.
Add in your shredded chicken and mix well. Scatter over your almonds and raisins, if using, and give one final mix. Serve on a platter with large lettuce leaves, in a sandwich, or as the perfect jacket potato topping.
