Ingredients
- 1/2 c butter
- 1 c sugar (generous)
- 2 eggs
- 1 t vanilla
- 2-3 small bananas, mashed
- 1/3 c ground flax seed
- 1 c flour
- 1 c whole wheat flour
- 1 t baking soda
- 3/4 t salt
- 1/2 c milk, plut 1 T vinegar
- 1 c walnuts, chopped (optional)
Preparation
Cream butter and sugar. Add eggs and vanilla; mix well. Mix in bananas. In separate bowl, combine dry ingredients. Add alternately to creamed mixture with soured milk or sour cream. Fold in nuts. Pour into oiled 9"x5" loaf pan. Bake at 350° for 1 hour or until done.
