Ingredients
- 3 T Extra virgin olive oil
- 4 c tiny broccoli florets
- 2 T pine nuts
- 3/4 c double-strength chicken stock
- 1 t fresh thyme or 1/2 t dried
- 3 T unsalted butter
- 4 oz chevre (goat cheese), crumbled
- pepper
- 1 pkg angel hair pasta
Instructions
Bring pot of water to a boil with 1 T olive oil. Saute broccoli and pine nuts in 2 T olive oil for 1 minute and add stock. Bring to a boil. Add thyme, pepper, butter and cheese. Mix until cheese melts. Lower heat to warm. Cook pasta. Drain and rinse under hot water. Add pasta to sauce and toss gently.
