Preheat oven to 350°.
Mix all the ingredients except the flour and chocolate chips.  Mix in the flour one cup at a time.  Finally mix in the chocolate chips.  We use a #50 scoop to scoop out dough and place on cookie sheets.  If doing the full recipe, it helps to start one cookie sheet on a lower rack, then move it to an upper rack at 1/2 the time while adding a second cookie sheet of dough to the bottom rack.  This way there is always two sheets of cookies baking at a time.

  • 2 c shortening or butter
  • 6 eggs
  • 4 tsp baking soda
  • 2 tsp salt (reduce or eliminate if using salted butter)
  • 4 tsp cream of tartar
  • 1 T vanilla
  • ~8 c flour
  • 3 c chocolate chips

Preparation

Preheat oven to 350°.
