Mix all the ingredients except the flour and chocolate chips. Mix in the flour one cup at a time. Finally mix in the chocolate chips. We use a #50 scoop to scoop out dough and place on cookie sheets. If doing the full recipe, it helps to start one cookie sheet on a lower rack, then move it to an upper rack at 1/2 the time while adding a second cookie sheet of dough to the bottom rack. This way there is always two sheets of cookies baking at a time. | |||

- 2 c brown sugar
- 2 c white sugar
- 2 c shortening or butter
- 6 eggs
- 4 tsp baking soda
- 2 tsp salt (reduce or eliminate if using salted butter)
- 4 tsp cream of tartar
- 1 T vanilla
- ~8 c flour
- 3 c chocolate chips
Preparation
Preheat oven to 350°.
Mix all the ingredients except the flour and chocolate chips. Mix in the flour one cup at a time. Finally mix in the chocolate chips. We use a #50 scoop to scoop out dough and place on cookie sheets.
