Ingredients
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup whole milk, warm or room temperature
- 1/4 teaspoon salt
- 2 teaspoons Dijon
- Favorite Pizza Crust
- 5 thinly sliced pieces prosiutto
- 1/4 pound gruyere cheese, shredded
- 4 ounces fresh mozzarella cheese, cut into bite-sized pieces
- 1 egg
Preparation
Preheat oven to 550 degrees. Place pizza stone in oven. Heat for at least 20 minutes at 550 degrees.
In a small sauce pan, melt butter over a medium heat. Once butter is melted, whisk in flour. Cook for 1 minute. Slowly whisk in warm milk and salt. Bring to a boil and reduce to a simmer until thickened and coats the back of a spoon, about 2 minutes. Add dijon and let cool slightly.
Roll dough out to form pizza, about 10 inches. Transfer to a pizza board covered in cornmeal to prevent sticking.
Spread béchamel all over pizza leaving a tiny border on the crust. Sprinkle with 3/4 of the grated gruyere. Cover in prosciutto. Sprinkle with remaining gruyere and dot with mozzarella cheese.
Crack fresh black pepper all over pizza and transfer to the pizza stone.
Once the pizza has been in for 3-4 minutes, crack the egg onto the middle of the pizza. Cook another 5-7 minutes until crust is golden brown, cheese is bubbly and the egg white is cooked.
