Ingredients
- 1/2 c butter, softened
- 1 c sugar
- 2 eggs
- 1 1/2 c mashed, ripe bananas
- 1 T orange juice concentrate
- 1 1/4 c flour
- 1/2 c all-bran cereal
- 3/4 t baking soda
- 1/2 t salt
- 3/4 c raisins
- 1/2 c finely chopped walnuts (optional)
Preparation
Heat oven to 350°. Line muffin cups with paper liners. Beat butter and sugar. Beat in eggs, bananas and OJ concentrate.
In a separate bowl mix flour, cereal, soda, and salt. Stir the flour mix, raisins, and nuts into the creamed mixture. Mix just enough to blend.
Fill muffin cups 3/4 full. Bake for 25 minutes or until a toothpick comes out clean.
