The soup makes a light, creamy broth.

Ingredients

  • 1 tbsp olive oil
  • 1 lb spicy Italian sausage[1]
  • 1 red onion (diced)
  • 2 large carrots (sliced)
  • 2 tbsp minced garlic
  • 6 cups chicken broth
  • 30 oz canned white beans (drained)
  • 2 cups spinach
  • 2 bay leaves
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1 cup half and half

Preparation

Heat oil in a large pot. Cook sausage.

Add onions, garlic, and carrots. Cook 3-4 minutes.

Add broth, beans, salt, Italian seasoning, and bay leaves. Bring to a boil, reduce heat, simmer for 25 minutes until carrots are tender.

Stir in spinach and cream and serve.

Notes

  1. Using a sweet Italian sausage is too mild. Add red pepper flake.
