Ingredients

  • 1 pizza crust
  • ~10 oz wild mushrooms
  • 6 cloves garlic, minced
  • 3 T olive oil, divided
  • kosher salt
  • fresh ground pepper
  • 1 lb fresh mozzarella, grated or coarsely chopped
  • ~2 oz baby spinach
  • 1/2 c grated Manchego cheese
  • 3 oz goat cheese
  • 1/4 c grated Parmesan
  • red pepper flake
  • 8 slices prosciutto

Preparation =

Preheat the oven to 425°.

Trim and cut any large mushrooms into bite size pieces. Toss mushrooms and minced garlic with 1-2 tablespoons of olive oil. Add salt and pepper to taste. Spread on a baking pan and roast in the oven for 20-25 minutes, stirring a couple times. Set aside to cool.

Increase oven temp to 475°.

Press out the crust in a baking sheet or for a baking stone. Brush the top of the crust with olive oil. Par-bake the pizza crust for 7 minutes.

Spread the mozzarella on the crust. Spread the mushrooms on top of the mozzarella. Add a thin layer of spinach. Sprinkle the Manchego on top of the spinach. Sprinkle red pepper flake over all, to taste. Spread crumbled goat cheese on top. Sprinkle the Parmesan on top of the goat cheese. Pepper to taste.

Bake for 15-18 minutes, until the cheese is bubbly and starting to brown. Remove from the oven and quickly add the prosciutto. Slice and serve immediately.
