Ingredients

  • 2 c all-purpose flour
  • 1 c oatmeal (quick or old-fashioned)
  • 1 c sugar
  • 2 t baking powder
  • 1/2 t baking soda
  • 3/4 t salt
  • 2 eggs
  • 1/2 c oil
  • 1/2 orange juice
  • 1/3 c water
  • 1 T orange zest
  • 3/4 c cranberries, chopped
  • 1/2 c apricots, chopped
  • 1/2 c chopped nuts

Preparation

Preheat oven to 350. Grease and flour just the bottom of a 9x5" loaf pan.

Combine first six ingredients, mix well; set aside.

Whisk eggs and oil together to blend thoroughly, mix in the orange juice, water, and orange zest. Add to dry ingredients until just moistened. Fold in remaining ingredients. Pour into prepared loaf pan.

Bake for 1 hour 15 minutes until toothpick test comes out clean. Cool for 10 minutes, remove from the pan, and cool completely.
