Ingredients

  • 2 tubes (7.5 oz each) refrigerated buttermilk biscuits
  • 1 1/2 lb ground beef
  • 1/2 c finely chopped onion
  • 2 eggs
  • 1 pkg (10 oz) frozen, chopped spinach, thawed and squeezed dry
  • 1 can (4 oz) mushroom stems and pieces, drained
  • 4 oz (~3/4 c) crumbled feta cheese
  • 1/4 c grated Parmesan
  • 1 1/2 t garlic powder
  • salt & pepper to taste
  • 1-2 T butter or margarine, melted

Preparation

Press and flatten biscuits onto bottom and up sides on greased, 7x11 baking dish; set aside. In a skillet over medium heat, brown beef and onion; drain.

In a bowl, beat eggs. Add spinach and mushrooms; mix well. Stir in cheeses, garlic powder, salt, pepper and beef mixture; mix well. Spoon into prepared crust. Drizzle with butter. Bake, uncovered, at 375° for 25-30 minutes or until crust is lightly browned.
