Ingredients
For the Crust and Crumble:
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 1/2 tsp cinnamon
- Pinch of salt
For the Rhubarb Filling:
- 2 cups chopped rhubarb (fresh or frozen)
- 1/2 cup granulated sugar
- 1 tbsp cornstarch
- 1/4 cup water
- 1 tsp vanilla extract
For the Cream Cheese Layer:
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 egg
- 1/2 tsp vanilla extract
Preparation
Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
In a bowl, mix together all the crust ingredients until crumbly. Press half into the bottom of your pan and set the rest aside for the topping. Bake the base for 10 minutes.
Meanwhile, in a saucepan over medium heat, stir together rhubarb, sugar, cornstarch, and water. Let it simmer until thickened and the rhubarb softens—about 5–7 minutes. Stir in the vanilla and let it cool a bit.
For the cream cheese layer, beat the cream cheese with sugar, egg, and vanilla until smooth.
Once your crust has baked, pour the cream cheese layer over it, then spread the rhubarb mixture on top. Sprinkle the remaining crumble on everything like a cozy little blanket.
Bake for 30–35 minutes, until the top is golden and the center is just set. Let cool completely, then chill in the fridge before slicing.
