Ingredients
- 12 limes
- 1 3/4 t lime zest
- dash salt
- 3 egg yolks, beaten
- 1/2 c butter
- 1/2 c sugar (or less)
- 3 eggs, beaten
- 1 c cream
- Additional whipped cream
- Additional lime zest (garnish)
- Fresh mint sprigs (garnish)
Preparation
Cut a thin slice from bottom of each lime so they will sit flat. Cut a 3/4" slice from top of each lime. Carefully juice the lives, preserving the shape of the shell.
Set aside 1/4 c juice. Clip membranes and remove pulp.
Melt butter in double boiler. Stir in 1 3/4 t lime zest, 1/4 c lime juice, sugar and salt. Gradually add eggs and egg yolks, stirring constantly. Cook until thick and smooth. Remove from heat and cool completely.
Beat 1 cup cream until soft peaks form and fold into lime mixture; spoon into lime shells, mounding the mixture on top. Freeze for 6 hours or until firm.
To serve, top with additional whipped cream and lime zest, garnish with mint sprigs.
