Ingredients

  • 1 1/2 c all-purpose flour
  • 1/2 c powdered sugar
  • 3/4 c cold butter
  • 4 eggs
  • 1 1/2 c sugar
  • 1/2 c lemon juice
  • 1 t baking powder
  • 3/4 c flaked coconut

Preparation

In a bowl, combine flour and powdered sugar; cut in the butter until crumbly. Press onto the bottom of a lightly greased 9x13" pan and bake at 350° for 15 minutes.

Meanwhile, in a mixing bowl, beat the eggs, sugar, lemon juice and baking powder until well mixed. Pour over the crust and sprinkle with coconut over the top. Bake at 350° for 20-25 minutes or until golden brown.
