Ingredients

  • 3 cloves garlic, finely chopped
  • 1/4 t ground cumin
  • 1/4 t ground cardamom
  • 2 T fresh lime juice
  • 3/4 t salt
  • 1/2 t black pepper
  • 2 T plus 2 t olive oil
  • 8 (1/2"-3/4" thick) rib lamb chops (~2 lbs)

Preparation

Whisk together garlic, cumin, cardamom, lime juice, salt, pepper, and 2 t oil and transfer to a sealable plastic bag just large enough to hold lamb. Add lamb, seal bag, forcing out excess air; massage until evenly coated. Marinate at room temp, turning bag occasionally, 15 minutes.

Heat 1 T oil in 12" nonstick skillet until hot but not smoking; cook half of lamb about 3 minutes on each side for medium-rare. Transfer cooked lamb to platter. Wipe out skillet; repeat with remaining lamb and oil. Transfer to platter and let rest 5 minutes.
