Ingredients

  • 1 c butter
  • 1/2 c shortening
  • 3 eggs
  • 1 1/2 c brown sugar
  • 1 1/4 c white sugar
  • 1 1/2 t vanilla
  • 3 c flour
  • 1 1/2 t baking soda
  • 1 1/2 t salt
  • 4 1/2 c oats
  • 1 1/2 c butterscotch chips
  • 1 1/2 c chopped granny smith apples

Preparation

Peel and chop apples. Place on cookie sheet and dry in oven at 200° for 30 minutes.

Mix wet ingredients by hand (butter through vanilla). Add remaining ingredients; mix well. May add water or flour as needed to achieve dough that is dry but slightly tacky. Form balls and place on greased cookie sheet. Bake at 365° for 10-13 minutes. Do not overbake--these burn easily.
