Ingredients
- 1 T butter
- 1 medium onion, sliced
- 2 lbs tomatoes, quartered
- 2 c chicken broth
- 1 T chopped basil
- pinch nutmeg
- pinch cloves
- 1 t paprika (or substitute 1/2 t cayenne for more heat)
- 1 t sugar
- salt and pepper to taste
- Parmesan cheese to garnish
Preparation
Combine all ingredients; simmer for 30 minutes. Whiz in food processor or blender until smooth. Serve topped with Parmesan.
