Ingredients

  • 1/3 c. olive oil
  • 2 tbsp. balsamic vinegar
  • 1 tsp. maple syrup or sugar
  • Salt and pepper to taste
  • 2 c. torn arugula leaves
  • 1 c. chopped curly endive
  • 1 head Bibb lettuce, torn into pieces
  • 2 ripe but firm pears, cored and thinly sliced
  • Parmesan shavings

Preparation

In large salad bowl, mix together oil, vinegar, maple syrup and salt and pepper to taste. Add arugula, endive and lettuce. Toss well. Arrange on 4 salad plates. Arrange pears on top of lettuce. Shave Parmesan over pears.
