Ingredients
- 1/3 c. olive oil
- 2 tbsp. balsamic vinegar
- 1 tsp. maple syrup or sugar
- Salt and pepper to taste
- 2 c. torn arugula leaves
- 1 c. chopped curly endive
- 1 head Bibb lettuce, torn into pieces
- 2 ripe but firm pears, cored and thinly sliced
- Parmesan shavings
Preparation
In large salad bowl, mix together oil, vinegar, maple syrup and salt and pepper to taste. Add arugula, endive and lettuce. Toss well. Arrange on 4 salad plates. Arrange pears on top of lettuce. Shave Parmesan over pears.
