We had this on Thanksgiving 1999 in Fairview MT.
Ingredients
- 2/3 c wild rice
- 3 c water
- 4 t instant beef bouillon granules
- 4 slices bacon
- 1 medium onion, chopped
- 1/2 lb mushrooms, sliced
- 1 t oregano (crushed leaf)
- 1/2 t crushed leaf sage
- 3 ribs celery, chopped
- 2 c bread crumbs
- salt & pepper, to taste
Preparation
Run cold water through rice in a colander until water runs clear. Stir rice into the water in a 3-qt saucepan and stir in bouillon granules. Bring to a boil; stir to dissolve bouillon. Reduce heat, cover, and simmer until rice is tender, about 40 minutes.
Meanwhile, cut bacon into 1-inch pieces and fry adding the onion and mushrooms to saute with the bacon, until bacon is crisp and vegetables are slightly softened. Add to cooked rice, along with remaining ingredients. Adjust seasonings.
