Roasted Aspargus and Shiitake Mushrooms

Ingredients
- 1 lb asparagus, trimmed
- 1 lb small shiitake mushrooms, rinsed, stems removed
- 2 T extra-virgin olive oil
- 1 t coarse salt
- 1 T balsamic vinegar
- salt & pepper to taste
Preparation
Preheat oven to 450°. In a large bowl, toss the asparagus and mushrooms with olive oil to coat. Sprinkle with coarse salt.
Spread vegetables on two cookie sheets so they are not touching. Roast 20-25 minutes, shaking occasionally, until asparagus is browned and mushrooms are tender.
Arrange vegetables on plates or platter. Drizzle with balsamic vinegar and season to taste.
Serve warm or at room temp.
