Ingredients

  • 1/2 c vegetable oil
  • 5 medium-large onions, chopped
  • 5 lbs lean ground beef or turkey
  • 4 c (1 qt) ketchup
  • 1 1/4 c Dijon mustard
  • 2/3 c soy sauce
  • 1/4 c Worcestershire sauce
  • 1 T hot pepper sauce
  • 2/3 c packed light or dark brown sugar
  • 1 T garlic powder
  • 30 sandwich buns

Preparation

Heat oil in a large roasting pan over two burners on medium-high heat. Add onions and cook, stirring, until tender, 5-7 minutes. Add ground meat and cook, stirring frequently to break up larger clumps, until no longer pink. Drain or spoon off any excess fat.

Mix remaining ingredients, except buns, in a medium bowl and stir them into meat. Continue to cook, stirring frequently, until mixture is thick, 5-8 minutes.

To warm sandwich buns, heat oven to 325°F. Place 1 bun per person in a single layer on a baking sheet. Bake until buns are warm throughout, 8-10 minutes. Warm more as needed.

Spoon a portion of meat onto each bun and serve.
