I like a stronger Dijon flavor, so I typically use 2 T of Dijon instead of 1. I have also replaced some of the butter with extra-virgin olive oil instead.

Ingredients

  • 2 chicken breast halves
  • 4 T butter, softened
  • 2 T onion
  • 1 T Dijon mustard
  • 4 oz uncooked fettuccine

Preparation

Preheat the oven to 350°F.

Mix together the butter, onion and mustard. Put the chicken into a small baking dish and brush some of the mixture over the chicken. Put the chicken in the oven and periodically baste with the mixture.

Cook the fettuccine, drain and toss with the remaining butter/mustard mixture. Serve the chicken on a bed of pasta.

Alternative Preparation

To reduce the cooking time, season the chicken breasts with salt and pepper, then saute the chicken instead of baking it.
