Ingredients
Filling
- 1/2 c chopped walnuts
- 1 1/2 t cinnamon
- 3 T butter, melted
Muffins
- 1 c + 7 T all-purpose flour
- 2 t baking powder
- 1/2 t baking soda
- 1/4 c sugar
- 1 large egg
- 3 T unsalted butter, melted
- 1 c + 2 T buttermilk (or 3/4 c plain yogurt and 1/3 c low-fat milk)
Topping
- 1/2 c honey
Preparation
Preheat oven to 400°F.
Mix all the filling ingredients together in a small bowl. In a large bowl, mix together the flour, baking powder, baking soda, and sugar. In a wide-mouthed measuring cup, whisk the egg, melted butter, and buttermilk. Make a well in the dry ingredients, pour in the liquid, and mix lightly and gently, remember to keep it bumpy rather than smooth. Fill the muffin cups one-third full, add a scant tablespoon of filling, then cover with more muffin mixture until two-thirds full. Sprinkle any remaining filling on top of the muffins.
Bake for 15 minutes, or until golden brown. Put the muffins onto a rack and drizzle with honey.
