Ingredients
- 1 onion, chopped
- 3 bell peppers, chopped
- 2 T onion flakes
- 4 t ground cumin
- 3 T cilantro, chopped
- 3 cans cream of chicken soup
- 3 cans chicken broth
- 3 cans diced tomatoes (use "hot" for extra spice)
- 1 can corn
- 1 can black beans
- 1 small can diced green chilies or jalapenos or fresh hot peppers, if desired
- 3 lbs. cooked chicken, cut up (rotisserie, grilled, boiled; whatever you have, leftover turkey is good)
Preparation
Saute onion and peppers in butter in a large pot or stock pot until softened.
Add all other ingredients.
Simmer 30-60 minutes.
