Ingredients

  • 1 onion, chopped
  • 3 bell peppers, chopped
  • 2 T onion flakes
  • 4 t ground cumin
  • 3 T cilantro, chopped
  • 3 cans cream of chicken soup
  • 3 cans chicken broth
  • 3 cans diced tomatoes (use "hot" for extra spice)
  • 1 can corn
  • 1 can black beans
  • 1 small can diced green chilies or jalapenos or fresh hot peppers, if desired
  • 3 lbs. cooked chicken, cut up (rotisserie, grilled, boiled; whatever you have, leftover turkey is good)

Preparation

Saute onion and peppers in butter in a large pot or stock pot until softened.

Add all other ingredients.

Simmer 30-60 minutes.
