Ingredients

  • 1/2 c smooth peanut butter (no added salt or sugar)
  • 5 T soy sauce
  • 1 T brown sugar
  • 2 T water
  • 2 garlic cloves, minced
  • 1 T fresh lemon juice
  • 1 t dried crushed red chilies (or 1/2 t chili flakes), or to taste
  • 1/4 t ground cinnamon
  • 4 T butter
  • 1 onion, chopped
  • 2 whole chicken breasts (~2 pounds), halved

Preparation

In a blender or food processor, combine the peanut butter, soy sauce, brown sugar, water, garlic, lemon juice, chilies, and cinnamon.

Put the mixture in a saucepan over low heat. Add the butter and melt; simmer for 5 minutes. Let cool to room temperature.

Put the onion and chicken breasts in a single layer in a shallow glass or ceramic dish. Pour on the marinade and let stand, covered, for 12-24 hours in the refrigerator.

Prepare the grill or heat the broiler. Cook the chicken about 7-8 inches from the flame for about 4-5 minutes on each side, turning several times during the cooking process.
