Ingredients

  • 2 large ripe tomatoes
  • 1 lb bulk sweet Italian sausage
  • 1/2 c diced red onion
  • 1 T plus 1 t chopped garlic
  • 1/4 c chopped fresh sage
  • 1 lb penne, cooked according to directions on package
  • 1 1/3 c heavy cream
  • 1/8 c dry white wine
  • 1/4 c grated Parmesan cheese
  • sage sprigs for garnish

Preparation

Skin and core tomatoes. Place in a strainer and press to remove liquid and seeds from tomatoes. Chop coarse and set aside.

Crumble sausage into a saute pan. Cook over medium heat 5-7 minutes until sausage just begins to lose its pink color. Add onion and cook for 1 minute more. Add garlic, sage and penne. Toss. Reduce heat to very low and let stand. In a saucepan, heat cream. Whisking briskly, add wine. Stirring constantly, cook over low heat about 5 minutes until sauce is smooth and has reduced by about one-fourth. Stir in Parmesan. Pour sauce into pasta mixture and toss thoroughly. Transfer to a serving plate. Garnish with chopped tomatoes and sage sprigs.
