I like lutefisk. I have very mixed feelings about this recipe. I found it in a fundraising cookbook from Bethany Homes from 1994, and couldn't let it pass into obscurity.
Ingredients
- 2 c cooked lutefisk, flaked
- 1/2 c rice
- 1 t salt
- 1 c water
- 1 c milk
- 2 eggs
- 2 T butter
Preparation
Cook rice in water and salt until done. Beat eggs and add milk. Pour over lutefisk, rice and butter. Put in buttered dish and bake 45 minutes.
