Ingredients

  • 1 1/2 c flour
  • 1 t baking soda
  • 1 c salted butter (room temp)
  • 3/4 c sugar
  • 3/4 c lite brown sugar
  • 1 egg
  • 1 t vanilla
  • 1 1/2 c oatmeal
  • 1 c dried cherries or cranberries
  • 1 c white chocolate chips
  • 1 c toffee pieces

Preparation

Preheat oven to 350°. Sift together flour and baking soda. In separate bowl, cream butter and sugar until light and fluffy; ~2-3 minutes. Add egg and mix on high. Add vanilla extract and mix.

Add sifted flour in portions and mix on low speed until well combined. Add oatmeal, dried cranberries, white chips and toffee pieces until well combined.

Divide dough into 3 equal portions and roll into logs, approximately 1 1/2" in diameter. Dough can be baked immediately or wrapped in waxed paper and store in refrigerator for a few days or frozen for months.

Cut 3/4" slices off logs and place on parchment paper-lined cookie sheet. Bake until golden brown; approximately 8-10 minutes. Leave cooling on cooling rack.
