Ingredients
- 5 3/4 c whole wheat flour
- 5 3/4 c all-purpose flour
- 2 pkgs yeast
- 2 c warm water
- 2 T oil (or melted shortening)
- 5 t salt
- 1/4 c sugar
- 2 c milk
Preparation
Dissolve yeast in warm water. Add oil, salt, and sugar. Stir in milk. Gradually stir in whole wheat flour. Beat vigorously for 3 minutes--beat with electric mixer as long as possible, i.e. until dough is too stiff. Stir in while flour.
Knead on lightly floured board until smooth and elastic.
Place in greased bowl. Turn over so greased side is up. Cover and let rise until double, about 1.5 hours in a warm room. Punch down the dough. Let rise again until 1.5 times original size.
Shape into 3 loaves. Let rise in greased 9x5 pans until doubled. Bake at 350 for 50 minutes.
