Ingredients
- 2 1/2 c flour
- 2 t baking powder
- 1 t salt
- 1/2 t baking soda
- 1/4 c butter (room temp)
- 1/2 c sugar
- 1 egg, slightly beaten
- 1 1/2 c buttermilk (room temp)
- 1 c raisins
- 3 T melted butter
- 1-2 T sugar
Preparation
Preheat oven to 375°F. Spray inside of 1 1/2 qt casserole with Pam. Sift together dry ingredients. Set aside. Cream butter and sugar; add egg and buttermilk; blend. Add to dry ingredients and mix gently until well moistened. Fold in raisins. Pour into casserole dish, drizzle with melted butter, and sprinkle with sugar.
Bake at 375 for 30 minutes, reduce to 325° and bake 30 more minutes or until done. Serve warm with butter.
NOTE: The melted butter may drip/run off the sides, so put a baking sheet or something with sides under the casserole dish to catch the runoff.
