Ingredients
- 10 oz (~15 cups) pre-washed mixed baby greens
- 1 med fennel bulb, cored and thinly sliced
- 1/2 med red onion, thinly sliced (optional)
- 4 oz crumbled blue cheese (~ 3/4 c)
- 6-8 T extra-virgin olive oil
- salt and fresh ground black pepper
- 1/2-2 T balsamic or rice wine vinegar
Preparation
Place greens, fennel, onion and cheese in a large bowl. Just before serving, toss with 6 tablespoons olive oil and a generous sprinkling of salt and pepper. Taste, adding more oil, salt, or pepper, if necessary. Add 1 1/2 tablespoons vinegar and toss to coat, adding more, if necessary, to taste, and serve.
