Ingredients

  • 2 ripe pears, diced
  • 4 c arugula
  • 3/4 c crumbled goat cheese
  • 1/2 c sliced almonds
  • 3 T extra-virgin olive oil
  • 1 T balsamic vinegar
  • 3 T fresh lemon juice
  • dash of salt and freshly ground black pepper
  • 1 T grated lemon zest

Preparation

Toss the pears, arugula, goat cheese, and almonds together. Combine the olive oil, vinegar, lemon juice, salt, and pepper and slowly pour over the salad. Toss to combine, and finish by scattering the lemon zest on top.
