Ingredients
- 1 T oil
- 1 garlic clove, minced
- 2 chopped chicken breasts
- 1/2 c coconut milk or cream
- 3 3/4 c chicken stock
- 1/4 t chili powder
- 1/2 t turmeric
- 1/2 t curry powder
- 2 T peanut butter
- 2 T lemon juice
- 1 c thread noodles (soften in stock, then cut)
- fresh cilantro
- thai chili sauce
- 2 t lime juice
Preparation
Heat oil in large pot. Saute garlic and chicken until cooked. Add remaining ingredients and simmer 15 minutes. Garnish with fresh cilantro.
Note: Add more veggies to taste--baby corn, carrots, green beans, mushrooms, etc..
