Easy Tikka Masala

Ingredients

  • 1 c rice
  • 12.5 oz canned chunk chicken (drained)
  • 8 oz tomato sauce
  • 12 oz can evaporated milk
  • 1/2 c water
  • 1-2 T tikka masala seasoning[1]
  • 1 T sugar
  • salt and pepper

Preparation

Combine all ingredients except salt and pepper into a pot. Bring to a simmer and cook for 10-15 minutes, until rice is done, and sauce has thickened slightly. Season to taste.

Notes

  1. Instead of making/finding tikka masala seasoning, could also buy a jar of tikka masala sauce, and use that in place of the tomato sauce and milk.
